A Taste of France: A Different Point of View

On our Sacred South of France trip, a special “Bienvenue” evening unfolded on the private terrace of the 19th-century Gothic Hôtel de la Cité, nestled within the medieval walled city of Carcassonne, a UNESCO World Heritage Site. As the sun dipped below the ancient city walls, we were treated to breathtaking views and a captivating blend of history and gastronomy.

Guests enjoyed a glass of bubbly Blanquette de Limoux (the “ancestor” sparkling wine of Champagne), perfectly paired with exquisite canapés, including Melon, Blue Cheese, Prosciutto, and Basil Canapés; refreshing Blackberry Basil Mozzarella Skewers with Balsamic Drizzle; and Dried Apricot Blue Cheese Canapés with Walnuts. These delectable bites set the stage for an evening of indulgence.

A Taste of Scotland: Cullen Skink and Warm Scottish Hospitality

During our Scotland Mists, Mystics, and the Whisky Trail journey, one evening stands out for its blend of history, gastronomy, and unforgettable ambiance. Guests savored Cullen Skink, a velvety soup brimming with smoked haddock, epitomizing Scottish comfort. The meal continued with Balmoral Chicken, tender chicken breast stuffed with haggis and complemented by rich whisky sauce, followed by Cranachan, a traditional dessert with raspberries, whipped cream, honey, oats, and a hint of whisky.

As we gathered around the table, the soulful sounds of bagpipes filled the air, adding warmth and connection. Sharing stories and laughter with local families, we immersed ourselves in Scottish traditions. This wasn’t just a meal; it was an invitation into the heart of Scottish hospitality.

A Taste of Mexico: Mayan Mystery Revealed

We ventured deep into the jungle on our Mexico: Mayan Mystery Revealed adventure, to a welcoming Mayan village, where the night unfolded with a ceremonial feast. As Cochinita Pibil—pork marinated in achiote and slow-cooked underground—released its smoky aroma, we were drawn into the magic of the moment. The meal continued with Tikin Xic (“teekeen sheek”), a whole fish wrapped in banana leaves and bathed in tangy red achiote sauce, served alongside rice, beans, and warm tortillas.

A Taste of Bali: Island of the Gods

On our Bali: Island of the Gods journey, we began with a vibrant excursion to the local market, guided by a Chef from Four Seasons Resort: Bali At Jimbaran Bay. Returning to the hotel, we dove into a hands-on cooking class, crafting a delectable Balinese lunch with dishes like Tum be siap (minced chicken wrapped in banana leaves) and Pepes ikan kakap (grilled red snapper with aromatic spices).

A Taste of South Africa: A Land for All Seasons

In Cape Town, our South Africa: A Land for All Seasons journey led us to the home of a local jazz musician, where we were welcomed with warm hospitality, authentic South African cuisine, and live music. The night unfolded with starters like Dombolo (steamed bread), Vetkoek (crispy fried bread), and Chakalaka, a zesty tomato and bean relish. The main course was a feast of flavours, featuring tender Beef Stew and Chicken Stew, alongside a Crust-Free Vegetable Quiche, Creamed Spinach, Butternut Squash, and Fluffy Rice. The meal culminated with the indulgent Malva Pudding, a sweet, spongy dessert made with apricot jam, butter, and cream, served warm with a rich custard cream sauce.
